* To make vegan or vegetarian use tofu or seitan instead
1) In a Frying pan spray some one calorie cooking spray and place in your chicken thighs with any seasonings of choice. At the same time add your potatoes to a pan of boiling water. Cook chicken both sides until cooked and remove from pan. Potatoes you want to cook until 90% cooked through.
2) In the frying pan add some more cooking spray and a little water, garlic and ginger to mix with any flavour in the pan left from the chicken. Add in all the veg and stir fry (Dice or slice in whatever style you prefer). Add your potatoes and chicken in cut up, half way through cooking the veg.
3) Once the veg has cooked add in your hoisin, sriracha, and soy sauce, and mix well, a dash of water can help coat your stir fry at this point. Cook until the water added evaporates.
4) Serve and enjoy!
