Super Simple Tzatziki recipe pairs incredibly well with a lot of dishes and won't break the calorie bank by any means!
100g 0% Fat Greek Yoghurt
2 tbsp Fresh Mint
1 CloveGarlic (Minced)
1 tbsp Lemon Juice
½ Small Cucumber
Pinch of Salt
1 tbsp Chives
For Vegan Version Replace yoghurt with a vegan alternative
1) Scoop out the seeds from the centre of your cucumber and place into a food processor or use a grater and grate as finely as possible.2) Drain the liquid from the cucumber using a metal strainer and a spoon, and add a little salt to help draw out more liquid.3) Mix cucumber, yoghurt, garlic, salt, chives and lime juice in a bowl and stir. Once mixed set aside in the fridge for about an hour before serving.4) Serve with a slice of lemon or lime for squeezing
