The adventurers cheesecake, if you're someone with a sweet tooth and feel like you're missing out on some decadent cakes and pastries during your diet, this is a great option to help you through. Taking the time to make something like this really does make it a next level snack, and all the more enjoyable. Once you've made it once or twice. You'll be able to knock it up and get it ready very quickly!

Ingredients

Cheesecake Topping
500g/17.4oz
Quark
250g/8.8oz Natural Yoghurt
60g/2.1oz Whey Protein
3 Tsps cocoa
2 Tsps Vanilla Extract
2 Egg Whites
1 Sachet (12g/0.42oz) of Gelatine (optional but helps create a thicker texture)
50g/1.8oz blueberries
40g/1.4oz strawberries
200ml/6.7fl oz Semi-Skimmed Milk

Cheesecake Base
200g/7oz
muesli
2 tsp honey
1 tsp Coconut Oil

Method

Cooking Method (Cheesecake Topping):
1. Put the gelatine leaves into water
2. Mix milk & cocoa & add gelatine
3. In bowl mix yogurt, and quark
4. Add milk, vanilla & cocoa to quark
5. In separate bowl whisk eggs
6. Slowly fold eggs whites into quark mixture

Cooking Method (Cheesecake Base):
1. Heat coconut oil and honey until melted
2. Stir in oats until fully coated with oil and honey
3. Place in springform tin and gentle press mixture into place
4. When cooled, spread topping mixture over gently, careful not to mix and get rid of the incorporated air
5. Place in fridge for at least 4 hours
