Crispy zesty breaded chicken burger with a spicy sriracha coleslaw in a softly toasted brioche bun. This simple recipe is great to enjoy with friends, family or on your own and is a really healthy alternative to fast food options, packing a hefty dose of protein perfect for stimulating your muscle protein synthesis and making gains.
1) Start by pre-heating your oven to 220°C/430°F1. Mix your flour, garlic powder, salt, pepper, lemon zest & paprika together in a bowl.
2) In a separate bowl beat 1 egg.
3) Take your chicken breast and butterfly it, making sure to flatten any thicker parts of your butterfly to achieve an even thickness throughout.
4) Dip your chicken breast into your dry mix making sure to coat all over, tap off any excess dry mix and then dip into your egg mix, then finally back into your breadcrumbs.
5) On a baking tray some 1 calorie cooking spray, and place your coated chicken onto the trays and cook for 25 minutes, or until fully cooked through. Around half way through cooking turn over.
6) In the last minute or two add your bun to the oven to toast slightly
7) Mix your coleslaw and sriracha together.
8) Add your chicken to the base once cooked through, and top with lemon juice (let this soak into the chicken for a second, then add your spicy coleslaw mix, tomato and lettuce and put on the bun lid.
